自製照燒汁
照燒汁是一款日式醬汁料,是十分好用的汁料,能夠配多款菜式進食,自己去做照燒汁是很方便,放於雪櫃可保存三個月亦可以的...很多朋友試完整都很喜歡,大家都試試吧!

1先預備好材料:清酒400g.味醂400g.萬字醬油250g及指天椒2條
-
2將清酒煮滾,熄火,用長咀打火機點火於清酒中,(清酒此時會著火)等酒精燒去,當酒精燒完後,火就會自動熄滅
-
3將指天椒加入清酒裡,加入味醂
-
4再加入萬字醬油用慢火煮滾
-
5預備好打汁料:蘋果70g.甘筍60g.蒜頭10g.薑8g.食用開水300g,將所有料切細粒
-
6將打汁料用攪拌機打成汁

7將已經打好的汁倒入清酒料內,用慢火煮30分鍾(不用蓋上蓋)

8再預備調味料:砂糖130g(如不想太甜可用110g),鹽2g,麥芽糖1湯匙,麻酒1茶匙,及打芡用的生粉

9煮好30分鐘後加入砂糖

10再加入海鹽
-
11加入麥芽糖煮溶

12加入麻油
-
13最後用少許食用開水拌勻生粉打芡就可以熄火

14將已經煮好的照燒汁完全灘凍才可以入樽放入雪櫃裡慢慢用(不用放冰箱)
TIPS
照燒汁是偏甜,可以當蒸魚豉油用
