1豬肉以醃料醃15分鐘 Marinate minced pork for 15 minutes.

2茄子切去頭尾,切成每段2吋再一開四 Cut the ends of eggplants. Then section and cut into strips.

3燒熱油鑊,將茄子煎至微焦,盛起備用 Pan fry eggplant strips until golden brown. Set aside.

4原鑊炒爆香薑蓉及蒜蓉 Stir fry minced ginger and garlic.

5下豬肉炒至半熟 Add minced pork and stir fry until half done.

6下豆瓣醬炒香,下生抽、紹與酒、糖及水拌勻煮滾 Add chili bean paste, soy sauce, ShaoXing wine, sugar and water. Mix well and boil.

7茄子回鑊兜炒2分鐘至軟身及汁料濃稠 Add eggplant strips. Stir until eggplant is softened and sauce is thickened.

8有需要可下生粉水打芡 Add starch to thicken the sauce.

9下麻油及灑上葱花,完成 Add sesame oil and chopped spring onion. Done.
