【惹味小菜】鹹蛋煎肉餅 Pan-fried Pork Patty with Salted Egg 2023 年 03 月 07 日發佈 Cook1Cook 列印 0 13 2878 請稍等. 請稍等. 鹹蛋跟肉餅的配搭,除了蒸之外,亦可以用煎。試想想,當鹹蛋跟豬肉完全結合後再煎香,咬下去,口腔內只有濃濃的肉汁,以及昇華了的鹹香⋯⋯我要兩碗白飯! 食譜影片 查看影片詳情 食材 (3-4人) 30分鐘內 食材 免治豬肉 Minced pork 300克/g 熟鹹蛋 Cooked salted egg 3隻/pcs 紅蔥頭 Shallot 2顆/pcs 蒜頭 Garlic 2瓣/cloves 醃料 糖 Sugar 1茶匙/tsp 油 Oil 1茶匙/tsp 粟粉 Corn starch ½湯匙/tbsp 水 Water 3湯匙/tbsp 鹽 Salt ½茶匙/tsp 生抽Soy sauce 1茶匙/tsp 1用叉把鹹蛋黃壓碎備用 Mash the salted egg yolks with a fork. 2紅蔥頭切碎,蒜頭壓碎備用 Chop shallots and crush garlics. 3免治豬肉加入紅蔥頭,蒜頭和醃料拌勻 Mix minced pork with shallot, garlic and marinade. 4分次加水拌勻 Gradually add water and mix well. 5用手把肉搓至有黏性 Knead the meat until it becomes sticky. 6加入鹹蛋黃碎拌匀 Add mashed salted egg yolks and mix well. 7把豬肉分成揉成球形 Divide the pork mixture into small balls. 8中火燒熱油,下肉餅用鑊鏟按平 Pan fry the patties over low heat. Flatten them with a spatula. 9每面煎數分鐘至熟 Pan fry each side for several minutes.
