2先用骨刀把皮去掉;

3切除骨頭和多餘的部份;

4在約1" - 1.5" 位置刺穿做一個記號;

5順著記號割成1條直線;
-
6在骨上割開骨膜至見骨;

7用小刀挖去黏在骨上的骨膜;
-
8用小刀挖去黏在骨上的肉至完全乾淨。
