1雞翼 即買 解凍洗淨,放滾水內與薑片及紹興酒中火同煮10分鐘盛起 Thaw and wash chicken wings, then boil them in a pot of boiling water with ginger slices and Shaoxing wine over medium heat for 10 minutes. Remove from the pot and set aside.

2雞翼 即買 放冰水內冷卻,盛起後用廚紙印乾,加醃料醃15分鐘 Cool the chicken wings in ice water, then pat them dry with kitchen paper. Marinate the chicken wings with the marinade for 15 minutes.

4雞翼 即買 先沾上蛋液,沾一層薄薄的炸粉,再沾一次蛋液,再沾一次炸粉 Dip each chicken wing in the beaten egg, then coat with a thin layer of coating mixture. Repeat the egg and coating process once more.

5雞翼 即買 放熱油內中火炸至金黃色,取出後用廚紙吸乾油份,完成 Deep-fry the chicken wings in hot oil over medium heat until golden brown. Remove from the oil and place on kitchen paper to remove excess oil. Serve hot.
