1海參略作清洗,放碟上,隔水蒸20分鐘
Rinse dry sea cucumber then steam for 20 minutes.
2放涼後放凍滾水內浸一晚
Let cool then soak in cold water overnight.
3放熱水內浸至水變涼,重覆2-3次,至海參可以輕易對摺
Soak in hot water until cooled. Repeat 2-3 times until the sea cucumber can be folded easily.
4用小刀海參的口部(圓形位置)鎅開
Cut a long slit at the bottom of the sea cucumber.
5用小匙挖乾淨內臟及冲洗乾淨
Remove all internal organs and dirt insides. Rinse clean.
6放薑葱水內煲至水滾後加蓋熄火放涼,最後冲洗乾淨
Put the sea cucumber into a pot of water with spring onion stalks and ginger slices. Bring to a boil then remove heat, cover and let cool. Rinse again.
7發好的海參可以用保鮮袋包好,放冰格放3個月,使用前一晚取出放雪櫃解凍即可
You may keep the rehydrated sea cucumber in a freezer for several months.
