【家常食譜】冰糖甜醋排骨 Braised Spare Ribs with Sweetened Vinegar

1排骨切條汆水備用 Blanch the big slip ribs for later use.

2]炒香薑片, 紅葱頭,蒜。加入巳飛水排骨。略炒 Fry ginger, shallot and garlic for a while and add in the blanched ribs.

3加入酒,冰糖,甜醋,老抽,豉油,水 Add Shaoxing wine, rock sugar, vinegar, soy sauce for seafood, dark soy sauce and water.

4大火煮滾後,蓋上蓋,轉中小火。 間中兜炒,煮約一小時至排骨軟身,完成 Cook with high heat until boiling. Cover and simmer for 1 hour until the rids tender. Done.
TIPS
將肉反轉再煮可令肉色更美 Turn over the rids for better colouring.
