- 茄子 Eggplants 600克
- 免治豬肉 Minced pork 150 克
- 蒜蓉 Minced garlic 1湯匙
- 薑蓉 Minced garlic 1湯匙
- 葱花 Minced gniger 1湯匙
調味料Seasonings
- 豆瓣醬 Chili bean paste 2 湯匙
- 生抽 Soy sauce 1 湯匙
- 紹興酒 ShaoXing wing 1茶匙
- 糖 Sugar 1 湯匙
- 麻油 Sesame oil 1湯匙
- 水 Water 適量
- 生粉水Starch solution 少許
醃料Marinades
- 生抽 Soy sauce 1湯匙
醃料
- 紹興酒 ShaoXing wing 2茶匙
- 糖 Sugar 1茶匙
- 麻油 Sesame oil 1茶匙
- 胡椒粉 Pepper power 少許

豬肉以醃料醃15分鐘 Marinate minced pork for 15 minutes.

茄子切去頭尾,切成每段2吋再一開四 Cut the ends of eggplants. Then section and cut into strips.

燒熱油鑊,將茄子煎至微焦,盛起備用 Pan fry eggplant strips until golden brown. Set aside.

原鑊炒爆香薑蓉及蒜蓉 Stir fry minced ginger and garlic.

下豬肉炒至半熟 Add minced pork and stir fry until half done.

下豆瓣醬炒香,下生抽、紹與酒、糖及水拌勻煮滾 Add chili bean paste, soy sauce, ShaoXing wine, sugar and water. Mix well and boil.

茄子回鑊兜炒2分鐘至軟身及汁料濃稠 Add eggplant strips. Stir until eggplant is softened and sauce is thickened.

有需要可下生粉水打芡 Add starch to thicken the sauce.

下麻油及灑上葱花,完成 Add sesame oil and chopped spring onion. Done.
