自制烏冬|簡單易做
其實屋企自已整烏冬一d都唔難,非常簡單,只需兩種材料,同埋小朋友一齊整就好似玩playdough咁😆呢個食譜整出嚟嘅烏冬超Q彈又滑,鐘意粗d幼d自己話事,真係仲好味過出街買呀!大家不妨試試!

TIPS
1. 同等份量高筋+低筋麵粉 = 中筋麵粉
Bread flour + cake flour = All purpose flour
2. 水:粉 = 1 :2 (因不同牌子麵粉吸水性不同,水份自行調節,但不多於60%)
Water : Flour = 1 : 2 (water content not > 60%)
3. 木薯粉可增加烏冬QQ彈牙口感,份量可自行調節到合適口感
Tapioca flour to increase chewiness, can adjust the amount of tapioca flour to suit your own taste
-> 減低彈牙口感 lower the chewiness
Eg. 150g 高筋bread flour + 30g 木薯粉 tapioca flour
4. 烏冬煮熟後會稍為發脹 udon will become thicker after cooked
