【越泰風味】 香茅豬扒飯 Lemongrass Pork Chop Rice
食材
- 豬扒 Pork chop 2塊/pcs
- 雞蛋 Egg 1隻/pc
- 青瓜 Cucumber 少許/Some
- 蕃茄 Tomato 2片/slices
醃料
- 魚露Fish sauce 1茶匙/tsp
- 香茅 Lemongrass 1條/stalk
- 蔥白 Spring onion white 1條/stalk
- 生粉 Corn starch 2 湯匙/tbsp
- 蒜頭 Garlic 3瓣/cloves
- 醬油 Soy sauce 1茶匙/tsp
- 黃糖 Brown sugar 1茶匙/tsp
- 黑胡椒 Black pepper 少許/some
- 油 oil 適量/some
蘸汁
- 魚露 Fish sauce 1湯匙/tbsp
- 黃糖 brown sugar 1湯匙/tbsp
- 水 Water 50毫升/ml
- 蒜蓉 Minced garlic 1湯匙/tbsp
- 指天椒 (切碎)Chopped chili pepper 適量/To tast
- 紫洋蔥碎 Chopped red onion ½湯匙/tbsp
- 香茅(切碎) Chopped lemongrass ½ 條/stalk
- 油 ½湯匙/tbsp
- 老抽 ½湯匙/tsp
蔥油
- 青蔥(切碎)Chopped spring onion 2條/stalk
- 青橄欖油 Olive oil 1湯匙/tbsp
- 鹽 Salt 少許/some

豬扒洗淨印乾 Rinse and pat dry pork chops.

香茅取白色部分,拍扁並切碎 Take the white part of lemongrass, flatten and chop it.

加入其餘醃料,將豬排醃2至3小時 Marinate pork chops with lemongrass and the rest of the marinade for 2-3 hours.

蘸汁材料拌勻備用 Mix the dipping sauce ingredients and set aside.

蔥油材料放進碗中拌勻,放入微波爐煮15秒,取出備用 Mix the spring onion oil ingredients in a bowl, and microwave for 15 seconds. Set aside.

豬扒平鋪在烤盤上,在豬扒上面放醃料 Place the pork chops on a baking tray and spread the marinade on top.

放入已預熱190度的焗爐,焗15分鐘,翻轉再焗15分鐘 Bake in a preheated oven at 190 degrees Celsius for 15 minutes, then turn them over and bake for another 15 minutes.

雞蛋煎成太陽蛋 Pany fry an egg into a sunny-side-up. 將煮好的白飯放在碟上,另外將豬扒排好,太陽蛋放在飯上 Place the cooked rice on a plate, arrange the pork chops and egg on top of the rice.

在豬扒面淋上蔥油,再配以蘸汁烹用 Drizzle the spring onion oil on the pork chops and serve with the dipping sauce. Enjoy!
