【惹味小食】黃金風沙單骨雞翼 Half cut chicken wing in salted egg yolk sauce with deep fried g 2023 年 03 月 07 日發佈 Cook1Cook 列印 1 2 1277 請稍等. 請稍等. 黃金蝦同風沙雞都係大牌檔嘅知名菜式,今次我地將呢兩道菜式嘅醬汁結合,炮製黃金風沙雞翼,自然係雙重惹味,加上係單骨雞翼,做小食或送飯都咁適合! 食譜影片 查看影片詳情 食材 (3-4人) 1小時內 食材 雞翼 即買 Chicken wing 12隻/pcs 鹹蛋黃 Salted egg yolk 6隻/pcs 炸蒜 Deep fried garlic 適量/Some 蔥花 Chopped spring onion 適量/Some 醃料 生抽 Soy sauce 2湯匙/tbsp 紹興酒 Shaoxing wine 1湯匙/tbsp 糖 Sugar 2茶匙/tsp 胡椒粉 Pepper powder 少許/Some 生粉 Corn starch 適量/Some 1雞翼 即買 解凍抹乾,用鉸剪打直剪開, Defrost and pat dry chicken wings. Cut vertically. 2加生抽、紹興酒、糖及胡椒粉醃30分鐘 Marinate with soy sauce, Shaoxing wine, sugar and pepper powder for 30 minutes. 3鹹蛋黃蒸或焗20分鐘至熟, Steam salted egg yolk for 20 minutes. 4用叉壓碎備用 Mash with a folk. 5雞翼 即買 沾上薄薄的生粉 Coated with a thin layer of corn starch. 6燒熱油,放入雞翼 即買 中小火炸2-3-分鐘至熟透 Deep fry over medium low heat for 2-3 minutes until cooked. 7盛起 Dish up. 8中火燒熱油,下鹹蛋黃碎慢炒至溶化 Stir fry mashed salted egg yolk over low heat until completely melted. 9下雞翼 即買 炒勻至沾滿鹹蛋黃醬 Add in chicken wing and stir well. 10下炸蒜兜勻,再灑上蔥花 Stir in deep fried garlic and chopped spring onion. 11完成 Done.
