【土生葡菜】澳葡式免治肉碎煎蛋飯 Macanese Traditional Mixed Minchi (Minchi de Vaca e Porco)

香港人去茶記經常會叫免治牛肉飯加蛋。原來喺澳門嘅葡國人家庭,都有一道類似嘅經典家庭料理Minchi,免治肉會用豬肉混牛肉,有時甚至會配上雞肉,仲有炸薯粒,口感更加複雜。而配上太陽蛋,則係紀念十字軍東征時黃加白的葡國軍旗。除了配白飯之外,近年流行免治配薯蓉或薯餅享用。

- 免治牛肉 Minced beef 250克/g
- 免治豬肉Minced pork 100克/g
- 洋蔥(切碎) Onion (Diced) ½ 個/pc
- 薯仔 Potato 1個/pc
- 橄欖油 Olive oil 少量/Some
- 胡椒粉 Pepper 少量/Some
- 喼汁 Worcestershire sauce 2茶匙/tsp
醃料
- 生抽 Soy sauce 2湯匙/tbsp
- 老抽 Dark soy sauce 2湯匙/tbsp
- 喼汁 Worcestershire sauce 2茶匙/tsp
- 鹽 Salt 少量/Some

把薯仔切細粒,炸至金黃色,瀝油放涼,加少許鹽調味備用 Dice potato and deep fry until golden brown. Drain dry and let cool. Season with salt and set aside.

把牛肉及豬肉混合,並以醃料醃約5分鐘 Mix minced beef and pork well and marinade for 5 minutes.

先爆香洋蔥, 然後加入肉料 Stir fry onion with olive oil until fragrant, add in minced meat mixture.

大火炒至全熟 Stir fry over high heat until fully cooked.

加入胡椒粉及喼汁調味 Season with pepper and worcestershire.

加入炸薯粒 Add in potato crouton and stir well.

最後加上一隻太陽蛋即成 Finally add a sunny side up egg.
