【氣炸鍋食譜】古早味芝士蛋糕 Airfryer Castella Cheese Cake 2020 年 04 月 19 日發佈 Cook1Cook 列印 32 114 24802 請稍等. 請稍等. 香港越開越多古早味蛋糕舖頭,但係成日都要大排長龍,仲好快賣晒。😢唉?不如試下自己氣炸 !岩岩出爐嘅古早味蛋糕熱辣辣,好鬆軟,裡面嘅芝士仲要係流心㖭,好誘人啊! 食譜影片 查看影片詳情 食材 (3-4人) 1小時以上 食材 芝士Cheese 2片 2 slice 蛋黃Yolk 3個 3 牛奶Milk 50克 50g 植物油Oil 35克35g 糖Sugar 10克10g 低筋麵粉Cake flour 50克 50g 蛋白Egg white 3份 3 pcs 糖Sugar 30g 1植物油加熱 Heat oil up 2倒入麵粉並攪拌均勻 Mix Cake flour and mix well 3牛奶及糖鍋中攪拌至糖融化 Mix milk and sugar in a hot pan until the sugar is completely melted. 4並放涼降溫後將蛋黃拌入 Let it so and add in the egg yolks at 40 °C 5取另一碗將蛋白打至發泡 Get another container to whisk the egg white 6分兩次加入糖繼續打發至蛋白可立起。 Add the sugar in two separate times and whisk till the mixture is stiff enough to stand on your whisker 7舀出一半的打發蛋白加入作法1的麵糊中 Scrap out half of the whisked egg whites and add it to the mixture in step 1 8混合均勻後再倒回剩餘的打發蛋白 Mix well and pour it back to the remaining egg white 9將烘培紙剪裁好放入盤中 Cut the baking paper so it fits the tray 10將混合的麵糊倒入一半高度並抹平 pour in half of the cake mixture and wipe the surface flat 11放入兩片芝士片 Add 2 slices of cheese 12再將剩餘的麵糊倒入抹平 Continue to pour in the remaining mixture and wipe it flat 13輕敲兩下將空氣擠出 Knock out the air inside lightly 14以Airfryer 150°C 氣炸10分鐘 Air fry for 10 minutes at 150 C 15將溫度調降至140°C,再氣炸15分鐘。 Turn down the temperature to 140 C. Air fry for another 15 minutes . 16待時間運轉結束即可,可用牙籤戳入中央檢視麵糊狀況。 Check if the cake is well cooked with a tooth pick 17完成 finish
