1魚柳洗淨,印乾,切件備用 分蛋,2隻,2隻蛋黃與第3隻蛋混合,備用。

2加入紹興酒,白胡椒粉,鹽 混合。再加入蛋白,混合,醃25分鐘。

3粟米汁: 混合1罐粟米蓉,加250毫升雞湯,中火加熱至微滾,加入蛋漿混合,加入生粉芡至合適黏度。

4魚柳上粟粉,中火落鑊炸2-3分鐘,拎起。

5大火加熱炸油,返炸魚柳30秒至合適顏色,拎起上碟。
