快餐店嘅脆香雞翼一向受歡迎,不過價錢都唔平,如果自己整,同樣嘅價錢就可以食好多隻!一於自己炸啦!

食材 (5-6人) 1小時內

食材

  • 雞翼 即買 Chicken wing 1磅/LB(約10隻
  • 薑 Ginger 2片/slices
  • 紹興酒 Shaoxing wine 1湯匙/tbsp
  • 雞蛋(拂勻) Whisked egg 1-2隻/pcs

醃料

  • 雞粉 Chicken powder 1茶匙/tsp
  • 白胡椒粉 White pepper powder ½茶匙/tsp

炸粉

  • 炸粉 Fried powder 1杯/cup
  • 黑胡椒粉 Black pepper powder 1茶匙/tsp
  • 紅椒粉 Paprika ½茶匙/tsp
  • 雞粉 Chicken powder ½茶匙/tsp
  • 鹽 Salt 少許/Some

    雞翼 即買 解凍洗淨,放滾水內與薑片及紹興酒中火同煮10分鐘盛起 Thaw and wash chicken wings, then boil them in a pot of boiling water with ginger slices and Shaoxing wine over medium heat for 10 minutes. Remove from the pot and set aside.

    雞翼 即買 放冰水內冷卻,盛起後用廚紙印乾,加醃料醃15分鐘 Cool the chicken wings in ice water, then pat them dry with kitchen paper. Marinate the chicken wings with the marinade for 15 minutes.

    炸粉材料拌勻備用 Mix the coating ingredients together and set aside.

    雞翼 即買 先沾上蛋液,沾一層薄薄的炸粉,再沾一次蛋液,再沾一次炸粉 Dip each chicken wing in the beaten egg, then coat with a thin layer of coating mixture. Repeat the egg and coating process once more.

    雞翼 即買 放熱油內中火炸至金黃色,取出後用廚紙吸乾油份,完成 Deep-fry the chicken wings in hot oil over medium heat until golden brown. Remove from the oil and place on kitchen paper to remove excess oil. Serve hot.
