脆皮雞下髀 Airfryer Crispy Chicken Drumstrick 2022 年 09 月 13 日發佈 Cook1Cook 列印 0 0 1240 請稍等. 請稍等. 俗語有云「雞髀打人牙骹軟」,今次教大家整呢個脆皮雞下髀,唔止好味咁簡單,咬落去仲香口兼脆卜卜,食過之後真係聽晒你話! 食譜影片 查看影片詳情 食材 (3-4人) 1小時以上 食材 雞錘 Drumstick 2隻 2pcs 沙薑粉 Sand ginger powder 1茶匙 1tsp 鹽 Salt ¼茶匙 ¼tsp 胡椒粉 Pepper powder ¼茶匙 ¼tsp 葱 Spring onion 少許 Some 紅葱頭 Shallot ½粒 ½pc 麥芽糖 Maltose 1湯匙 1tbsp 昭興酒 Shaoxing wine 1茶匙 1tsp 白醋 White vinegar 200毫升 200m 紅醋 Red vinegar 100毫升 100m 1將沙薑粉、鹽、胡椒粉、葱、紅葱頭醃雞錘 Marinate drumsticks with sand ginger powder, salt, pepper, spring onion and shallot. 2用保鮮紙封好過夜 Wrap drumsticks with plastic wrap, let marinate overnight. 3拌勻白醋、紅醋、麥芽糖及紹興酒,煮滾備用 Stir and boil white vinegar, red vinegar, maltose and Shaoxing wine. 4熱水輕煮雞錘 Boil the drumsticks for short while. 5將雞錘浸醋 Soak drumsticks in vinegar mixture. 6風乾最少兩小時 Take at least two hours to air dry. 7以170度氣炸15分鐘 Air fry for 15 minutes at 170°C. 8反轉雞錘 Flip over. 9以200度氣炸2分鐘 Air fry for 2 minutes at 200 °C.
