蟠龍茄子的名字夠霸氣，而且賣相亦非常呃Like，絕對係上得大枱嘅應節菜式，層次豐富嘅佢仲好好味。不過呢度菜其實做法相當簡單，配合埋氣炸鍋，新手都輕易整到。

食材（3-4人） 1小時以上

- 食材
- 茄子Eggplants 2 條2 pcs
- 免治豬肉Minced pork 60 克60 g
- 鯪魚肉 Fish meat 80 克80 g
- 魚香茄子醬 Sauce for spicy garlic eggplant 80克80 g

1用筷子輔佐切茄子，避免切斷。將茄子切成厚片。 Place the eggplant between 2 chopsticks.Slice the potatoes into thin slices.
2把鯪魚肉釀入茄子裡面 Stuff the fish meat between the eggplant slices.
3放入氣炸鍋噴油。 Spray oil over the eggplants.
4180度氣炸10分鐘反轉再噴油。180度氣炸多5分鐘 air fry at 180 degrees for 10 minutes.Flip over and spray oil again.air fry 180 degrees for 5 minutes.
5炒香免治豬肉 Fry the minced pork.
6加入魚香茄子醬 Seasoning with sauce for spicy garlic eggplant.
7勾芡。 Thickening with mixture of corn starch and water.
8把魚香茄子汁放在茄子上 Top the dish with the sauce.
9最後180度氣炸5分鐘。 Air fry at 180°C for 5 minutes
