【傳統口味】古早味芝士蛋糕 Taiwanese Castella Cheese Cake
古早味蛋糕店開到一街都係,不過價錢都唔平。其實要自己整一啲都唔難,而且用氣炸鍋已經做到。我地今次介紹嘅係芝士味,不過一理通百理明,自己改下饀料例如肉鬆都一樣得!一於放假就整呢個懷舊蛋糕啦!
食材
- 芝士 Cheese 2片/slices
- 蛋黃 Egg Yolk 3個/3pcs
- 牛奶 Milk 50克/g
- 植物油 Oil 35克/g
- 糖 Sugar 10克/g
- 低筋麵粉 Cake flour 50克/g
- 蛋白 Egg white 3個/pcs
- 糖 Sugar 30克/g

植物油加熱 Heat oil.

加入麵粉並攪拌均勻 Mix Cake flour and mix well.

牛奶及糖鍋中攪拌至糖融化 Mix milk and sugar in a hot pan until the sugar is completely melted.

放涼後將蛋黃拌入 Let it cold and add in the egg yolks at 40 °C.

取另一碗將蛋白打至發泡 Get another container to whisk the egg white.

分兩次加入糖繼續打發至蛋白企身 Add the sugar in two separate times and whisk till the mixture is stiff peaked.

舀出一半的蛋白,加入麵糊中 Scrap out half of the whisked egg white and add it to the batter.

混合均勻後倒進剩餘的蛋內 Mix well and pour back into the remaining egg white.

將烘培紙剪裁好放入盤中 Cut the baking paper so it fits the tray.

倒入一半麵糊並抹平 Pour in half of the cake mixture and wipe the surface flat.

放入兩片芝士片 Add 2 slices of cheese.

再將剩餘的麵糊倒入抹平 Pour in the remaining mixture and wipe it flat.

輕敲兩下將空氣擠出 Knock out the air inside lightly.

150°C 氣炸10分鐘 Air fry for 10 minutes at 150 °C.

將溫度調降至140°C,再氣炸15分鐘 Turn down the temperature to 140 °C and air fry for another 15 minutes .

完成後用牙籤戳入蛋糕中間,查看是否已經全熟,未熟的話可略加時間 Check if the cake is well cooked with a tooth pick. Add more time if needed.
