- 紹興酒 ShaoXing wine 2湯匙/tbsp
- 冰糖 Rock sugar 2塊 / pcs
- 老抽 Dark soy sauce 2湯匙 / tbsp
- 蒸魚豉油 Seasoned soy sauce for seafood 4湯匙 / tbsp
- 甜醋 Dark sweet vinegar 8湯匙 / tbsp
- 水 Water 10湯匙 / tbs
- 薑片 Ginger slice 適量 / Some
- 紅葱頭碎 Minced shallot 適量 / Some
- 蒜片 Ginger slice 適量 / Some

排骨切條汆水備用 Blanch the big slip ribs for later use.

]炒香薑片, 紅葱頭,蒜。加入巳飛水排骨。略炒 Fry ginger, shallot and garlic for a while and add in the blanched ribs.

加入酒,冰糖,甜醋,老抽,豉油,水 Add Shaoxing wine, rock sugar, vinegar, soy sauce for seafood, dark soy sauce and water.

大火煮滾後,蓋上蓋,轉中小火。 間中兜炒,煮約一小時至排骨軟身,完成 Cook with high heat until boiling. Cover and simmer for 1 hour until the rids tender. Done.
