辣雞煲Spicy Chicken hot pot

- 薑 Ginger 5-6 片 sli
- 蔥 ga Green onion 1條
- 麻辣醬Sichuan spicy sauce 1 湯匙tea sp
- 蠔油 Oyster sauce 1 湯匙tea sp
- 糖Sugar 1 茶匙tea sp
- 豉油 Soy sauce 1 茶匙tea sp
- 紹酒Shaoxing wine 130ml
- 干蔥頭Dried onion 3
- 粟粉Corn flour 1 茶匙tea sp
- 水Water 100ml

將雞用豉油丶糖丶豆粉撈好,放15分鐘 Sprinkle chicken with soy sauce,corn flour and sugar, leave it for 15 minutes

調好醬汁 mix the sauce

開火放少許油,放薑及干蔥爆香2分鐘 Heat Staub iron cocotte, add a little oil, add ginger and dried onion. Cook 2 minutes

放下雞略煮2分鐘,落已調好的醬,搞勻 Put chicken into the stub and cook for 2 minutes, add the mixed sauce in step 2, stirring a little bit

放紹酒及水,煮滾後蓋上煲蓋小火煮5分鐘,熄火焗5分鐘,即成。 Add Shaoxing wine and water cook for 5 mins with small fire after it boils. Then turn off fire and keep it for another 5 minutes.
