【葡式甜品】蕃薯牛油蛋糕 Sweet Potato Cake ( Batatada )

Batatada係土生葡菜,即係澳門葡國人家庭嘅菜式,現時已比較少地方食到。其實Batatada係有兩個版本,可以用薯仔,亦都可以用蕃薯。Batatada食落去比較實淨,同普通嘅牛油蛋糕好唔同,最啱就係配一杯齋啡,或者呍呢嗱雪糕一同享用。

- 黃蕃薯Sweet potatoes 400克/g
- 糖 Sugar 70克/g
- 無鹽牛油 Unsalted butter 125克/g
- 雞蛋 Egg 3隻/pcs
- 牛奶 Milk 135毫升/ml
- 椰奶 Coconut milk 3湯匙/tbsp
- 中筋麵粉 Flour 110克/g
- 泡打粉(發酵粉) Baking powder 1茶匙/tsp
- 鹽 Salt 少許/Some

蕃薯蒸熟壓蓉 Steam and mash sweet potato

牛油加糖打混至完全混合 Beat butter and sugar together until soft and pale in color

慢慢加入雞蛋漿打勻 Slowly add whisked egg into butter and sugar mixture

慢慢加入牛奶、椰漿 Slowly add milk and coconut milk.

以及蕃薯蓉 Followed by mashed sweet potato.

最後加入麵粉、發酵粉 和鹽調味 Finally fold in sieved flour and salt.

倒入焗爐模具,以180度焗45-60分鐘至表面金黃色 Turn mixture into a loaf tin. Bake for 45-60 minutes in a pre-heated oven at 180c

用餐刀插入蛋糕,如能乾淨拔出,表示蛋糕經已全熟。出爐後放置約30分鐘,切開享用風味更佳。 The cake is cooked when a knife can be inserted and removed clean. Cool down for 30 minutes and serve sliced.
