【家常菜式】麻婆豆腐 Mapo Tofu (Bean curd and mince pork in chili sauce)

- 煎煮豆腐 Tofu 1磚/pc
- 免治豬肉 Minced pork 200克/g
- 蒜頭 Garlic 2瓣/gloves
- 紅蔥頭 Shallot 1粒/pc
- 指天椒 Chili pepper 1條/pc
- 生粉水 Starch solution 適量/Some
- 蔥花 Chopped spring onion 適量/Some
醬汁
- 辣豆瓣醬 Spicy bean sauce 2湯匙/tbsp
- 花椒油 Sichuan peppercorn oil 2茶匙/tsp
- 生抽 Oil 1茶匙/tsp
- 糖 Sugar 1茶匙/tsp 1茶
- 水 Water 100毫升/ml

將豆腐切大粒 Cube tofu.

放鹽水汆水2分鐘,撈起瀝乾備用 Blanch in salt solution for 2 minutes. Drain dry.

蒜頭及紅蔥頭切碎,指天椒切圈 Mince garlic and shallot. Cut chili pepper into circles.

燒熱鑊,下蒜粒、紅蔥頭及辣椒爆香,再下免治豬肉炒勻 Stir fry garlic, shallot and chili pepper until fragrant. Then stir with minced pork.

下豆瓣醬、花椒油、生抽、糖炒勻,再加水煮滾 Add the ingredients of the sauce.

下豆腐,轉小火煮約5分鐘至入味 Add tofu cube. Turn to low heat and cook for 5 minutes.

下適量生粉水埋芡 Thicken the sauce with starch solution.
