【葡國風味】葡萄牙海鮮飯 Arroz de mariso

西班牙海鮮飯Paella相信大家都聽過甚至品嘗過,但葡萄牙海鮮飯Arroz de mariso又有沒有聽過呢?其實西葡兩國相鄰且同樣靠海,飲食口味亦相近。兩款海鮮飯其實都沒有指定的材料,總之是新鮮海鮮就可以,不過葡萄牙海鮮飯相對較多湯汁,而飯粒也更Al dente!

- Carolino 米或意大利米 Carolino rice or risotto rice 1-1.5杯/cup
- 橄欖油 Olive 50毫升/ml
- 洋蔥(切碎)Chopped onion 1個/pc
- 青紅燈籠椒粒 Chopped green and red bell pepper 50克/g
- 黑橄欖Black olive 10粒/pcs
- 海鮮上湯 Seafood broth 3杯/cup
- 大蝦Prawn 4隻/pcs
- 藍青口Blue mussel 4隻/pc
- 帆立貝 Scallop 4-6隻/pc
- 切粒番茄 Diced tomato 3個/pcs
- 牛油 Butter 20克/g
- 葡式惹味橄欖油 Piri Piri oil 適量/some
- 檸檬(搾汁用)Lemon for juice 1個/pc

藍青口及帆立貝用海鮮上湯焯熟,隔水待用 Blanch blue mussels and scallops in seafood broth until cook. Drain dry.

用橄欖油慢火爆香洋蔥 Stir fry onion with olive oil over low heat until fragrant.

下番茄粒及海鮮上湯 Add in tomato dice and seafood broth.

下米,煮大約20分鐘 Add rice and cook for 20 minutes.

以後放入海鮮及黑橄欖 Add all seafood and black olive.

加上切碎青紅椒粒 Add chopped green and red bell pepper.

加鹽調味,下牛油收汁 Season with salt. Add butter.

灑上Piri Piri oil 及檸檬汁 Serve with Piri Piri oil and lemon juice.
