- 牛奶 Milk 400毫升/ml
- 蛋白 Egg white 3隻/pcs
- 桃膠 Peach gum 適量/Some
- 冰糖 Rock sugar 30克/g

桃膠預早一晚浸發,挑去污物,沖洗乾淨備用 Soak peach gum overnight. Remove dirt and grit inside. Rinse and set aside.

牛奶細火加熱,加冰糖煮溶放涼 Heat milk and rock sugar until dissolved. Let cool.

將牛奶與蛋白拌勻再 Mix well milk and egg white.

過篩 Strain.

將桃膠放碗底 Add peach gum into a bowl.

再注入蛋白牛奶 Then add egg white and milk mixture.

隔水大火蒸15分鐘,熄火再焗10分鐘即成 Steam over heat for 15 minutes. Off heat and leave inside for 10 more minutes. Done.
