炸魷魚鬚是童年飲茶時必叫的點心,酥香脆口加上惹味的淮鹽,食落真的非常滋味。現在酒樓通常將炸魷魚鬚升級作小菜而非點心,價錢也三級跳。其實炸魷魚鬚的做法非常簡單,做一大堆讓家人朋友聚會、睇波時作小食,相信會大受歡迎呢!

- 魷魚鬚 Squid tentacle 450克/g
- 生粉 Corn starch 70克/g
- 麵粉 Flour 70克/g
- 黑胡椒粉 Black pepper powder 少許/Some
- 白胡椒粉 White pepper powder 少許/Some
- 淮鹽 Spice salt 少許/Some
醃料
- 五香粉 Five spice powder ½湯匙/tbsp
- 黑胡椒粉 Black pepper powder 1茶匙/tsp
- 白胡椒粉 White pepper powder 1茶匙/tsp
- 紹興酒 Shaoxing wine 1湯匙/tbsp

魷魚鬚切至合適的大小,洗淨抹乾,加醃料醃半小時 Cut squid tentacles into pieces. Clean and pat dry. Marinate for half hour.

將生粉、麵粉、黑胡椒粉、白胡椒粉及淮鹽放於膠袋內拌勻 Mix all powder in a plastic bag.

將魷魚鬚抺乾,放入膠袋內搖勻,均勻沾上炸粉 Pat dry squid tentacles. Put inside the plastic bag and shake well to make all squid tentacles are covered.

放入熱油中,先以大火炸1分鐘定型,轉細火炸2分鐘至熟,撈起瀝油 Deep fry squid tentacles in hot oil with high heat for 1 minute. Turn to medium heat and deep fry for 2 minutes. Take away and drain.

再以大火炸1分鐘逼出油份,完成 Deep fry with high heat for 1 minute again to remove excess oil. Done.
