Ingredients: 100g unsalted butter; 20g molasses sugar; 15g icing sugar; 115g low protein flour; 30g egg; 1tsp lemon juice; 1 lemon lemon zest; 1/4tsp salt

Easy made lemon butter cookies for the kids

- unsalted butter 100g
- molasses sugar 20g
- icing sugar 15g
- low protein flour 115g
- egg 30g
- lemon juice 1tsp
- lemon zest 1 lemon
- salt 1/4tsp

1Combine butter and sugar well. Add in icing sugar and salt.
2Add in icing sugar and salt
3Beat till the mixture turns pale
4Add in egg bit by bit until well combined.
5Add in lemon juice and fold in sifted flour.
6Mix in the lemon zest. (I added some lavender also)
7Pipe out the batter onto the tray. Bake in preheated oven at 180d for 10-12mins.
