五白湯係一道經典嘅甜品,深受民國時期嘅女士們歡迎。佢叫五白湯,係因為用咗五種白色嘅材料去做。如果你屋企無手提攪拌器,可以將煲到軟身嘅材料撈起,用攪拌機打碎再煲熱,如果你有破壁機,更加可以直接用米糊功能熱煮,更加方便!

- 花生 Peanuts 20克/g
- 糯米 Glutinous rice 15克/g
- 白蓮子 Lotus seeds 15克/g
- 雪耳Snow fungus 1朵/pc
- 雪梨Snow pear 1個/pc
- 冰糖 Rock sugar 適量/As used
- 水 Water 800毫升/ml

花生用熱水泡浸30分鐘,撕去外皮 Soak the peanuts in hot water for 30 minutes, then peel off the skin.

糯米用水浸泡15分鐘,瀝乾 Soak the glutinous rice in water for 15 minutes, then drain.

白蓮子去芯,泡浸15分鐘至軟身 Remove the core from the lotus seeds and soak in water for 15 minutes until soft.

雪耳浸水,去蒂去剪碎 Soak the snow fungus in water, remove the stem, and chop into small pieces.

雪梨去皮去芯 Peel and core the snow pear.

將以上材料放入煲內,加水煮至軟身 Add all the ingredients into a pot and pour in the water. Cook until everything is soft.

用攪拌機或手提攪拌器打碎, Use a blender or hand mixer to blend the soup until smooth.

加入冰糖煮至溶化即成 Add rock sugar and cook until dissolved.
