豉椒炒魷除了是惹味香口的菜式外,在粵語中又指被解僱,因為炒熟的魷魚捲起,好似以前打工仔執包袱時將行裝捲起。面對逆境,煮一道豉椒炒魷魚作晚餐,化悲憤為食慾和力量,不失為樂觀面對的好方法。

- 魷魚 Squid 1隻/pc
- 紅辣椒 Red chili pepper 1隻/pc
- 青辣椒 Green chili pepper 1隻/pc
調味料
- 蒜蓉豆豉醬 Black bean garlic paste 2湯匙/tbsp
- 豆瓣醬 Chili bean sauce 1湯匙/tbsp
- 紹興酒 Shaoxing wine 1湯匙/tbsp
- 生抽 Soy sauce 2茶匙/tsp
- 老抽 Dark soy sauce 1茶匙/tsp
- 糖 Sugar 1茶匙/tsp
醃料
- 胡椒粉 White pepper powder 1湯匙/tbsp
- 紹興酒 Shaoxing 魷魚洗淨,撕去外膜,

魷魚洗淨,撕去外膜,除去內臟 Clean the squid. Tear off the thin membrane of the body. Remove internal organs.

魷魚身切花後切大件,魷魚鬚切3-4件,加醃料醃30分鐘 Shallowly cut the squid body crosswise. Then cut into pieces.. Cut tentacles part into 3-4 pieces. Mariinate for 30 minutes.

青紅辣椒去核斜切備用 Remove the seeds of the chili peppers. Cut into pieces.

魷魚汆水兩分鐘備用 Blanch squid pieces for 2 minutes then set aside.

中火爆香蒜蓉豆豉醬及豆瓣醬 Stir fry black bean garlic paste and chili bean sauce in medium heat until fragrant.

下青紅椒略炒後下魷魚,兜勻後灒酒 Add chili pepper and stir fry. Then add squid and Shaoxing wine.

下生抽、老抽及糖兜勻,完成 Add remained seasonings. Stir well. Done.
