【生酮甜品】生酮朱古力慕絲蛋糕 Keto Chocolate Mousse Cake
這道生酮朱古力慕絲蛋糕口感與一般的慕絲蛋糕無異,但不含糖和麩質,適合追求生酮飲食和低碳飲食的朋友,而且做法並不複雜,基本上也不會失敗,即使入廚新手也可以一試。
餅底 Cake Base
- 杏仁粉 Almond Flour 50克 50g
- 無糖可可粉 Unsweetened Cocoa Powder 10克 10g
- 無鹽牛油 Unsalted Butter 40克 40g
- 羅漢果糖 Monk Fruit Sweetener 20克 20g
- 呍呢拿精油 Swallow Essential Oil ½茶匙 ½ tsp
朱古力慕絲 Chocolate Mousse
- 黑朱古力 Black Chocolate 50克 50g
- 無糖可可粉 Unsweetened Cocoa Po 10克 10g
- 熱水 Hot Water 20毫升 20ml
- 魚膠片 Gelatin Sheet 3克 3g
- 淡忌廉 Whipping Cream 250毫升 250m
- 羅漢果糖 Monk Fruit Sweetener 30克 30g

將所有餅底的材料拌勻 Mix all the cake base ingredients

壓平在6吋的焗模底 Flatten in a 6-inch baking mould.

放入已預熱至180度的焗爐內焗12分鐘 Bake for 12 minutes in an oven, which is preheated to 180 degree.

取出後放涼再放入雪櫃 Take out and let cool then refrigerate.

魚膠片先用水浸軟備用 Soak gelatin sheet in water to soften.

無糖可可粉與熱水拌勻備用 Mix unsweetened cocoa powder with hot water.

黑朱古力隔熱水座溶 Melt dark chocolate over hot water bath.

淡忌廉與羅漢果糖拌勻,細火煮熱 Mix whipping cream and monk fruit sweetener then cook over low heat

加入已溶化的黑朱古力及可可粉 Add melted black chocolate and cocoa powder.

加入魚膠片煮溶後熄火 Add softened gelatin sheet and turn off heat.

隔篩注入餅底之上 Strain on top of the cake base.

輕輕搖出空氣後,放雪櫃冷藏3小時以上即成 After gently shaking out the air, put it in the refrigerator for more than 3 hours, done.
