明太子肉鬆包(水克酵液) 2017 年 09 月 09 日發佈 Sallyho莎莉豪 列印 0 2 1442 請稍等. 請稍等. 養好了水克,餵了粉做酵種,找來一個外國食譜,用水克酵種加酵液,做出沒商酵而軟熟的台式包,因很久沒有做軟包,加入肉鬆及明太子,別有風味。 食譜影片 查看影片詳情 食材 (7-8人) 1小時以上 食材 Bread Flour 300g Sugar 48g Kefir Starter 150g Eggs 30g Condensed Milk 15g Milk 45g Water Kefir 90g Butter 45g Salt 5g 1Kefir Starter (1:1) Kefir Water 80g Bread Flour 80g Keep in Refrigerator overnight 2Method: 1) Combine Bread flour + Sugar + Kefir Stater + Eggs + Condensed Milk + Milk and Water Kefir 2) Autolys 30 minutes, + butter and salt, Knead, Rest dough to double size (around 2 hours) 33) cut into @80g, rest 20 minutes 4) Shaped dough final proof till ready (around 2 hours) 45) Bake at 180C for 15 minutes
