消暑湯水|冬瓜螺頭銀杏湯 Winter Melon, conch feet and ginkgo nut soup
以螺頭煲湯有滋陰養顏之效。不過浸發乾螺頭也得花一番工夫,怕麻煩的話可以選擇急凍的新鮮螺頭取代,解凍後即可使用,方便省時得多。這道冬瓜螺頭銀杏湯除了滋陰,還可以清熱解毒、提強記憶力,是老幼咸宜的方便湯水。
冬瓜:性涼味甘,能清熱解毒、利尿消腫、降血糖、降血壓,可用於熱病、水腫、高血糖、高血壓。
瘦肉:性溫味甘,能補氣養血、強筋健骨、滋陰潤燥,可用於氣虛血弱、筋骨酸軟、乾咳口渴等症狀。
螺頭:性平味甘,有補腎壯陽、滋陰潤燥等功效,可用於腎虛陽痿、消渴、便秘等症狀,對氣虛血弱、貧血衰弱者有益。
食材
- 冬瓜 Winter melon 600克/g
- 瘦肉 Lean pork 300克/g
- 急凍螺頭 Frozen conch feet 2粒/pcs
- 白果Ginkgo nut 60克/g
- 生薏米 Raw job's tears 30克/g
- 熟薏米 Cooked job's tears 30克/g
- 陳皮 Dried tangerine peel 2角/⅔pc

急凍螺頭解凍後洗刷乾淨 Thaw and clean conch feet

切去硬掩及嘴 Remove the hard cover and mouthparts

中間切開,除去內臟及黃色部份 Cut it in half and remove the intestines and yellow parts.

汆水5分鐘 Blanch in hot water for 5 minutes.

瘦肉汆水洗淨 Blanch the lean pork and wash it.

生熟薏米洗淨 Wash raw and cooked job's tear.

白果去皮洗淨 Peel and wash ginkgo nuts.

冬瓜洗淨 Wash the skin of the winter melon gently.

去囊切大塊 Remove the melon's seeds, then cut it into large chunks.

陳皮浸軟去囊 Soak the dried tangerine peel to soften and remove the pith.

煲滾水,下所有材料 Bring water to a boil and add all the ingredients.

滾起後轉中火,煲90分鐘 When it boils, reduce the heat to medium and simmer for 90 minutes.

酌量加鹽調味即成 Season with salt to taste and serve.
