【蒜香撲鼻】蒜蓉包 Garlic Bread
薄餅店嘅蒜蓉包好好食?想喺屋企都食到呢款蒜蓉包?其實方法都好簡單,要嘅就係耐性,等麵團有充足嘅時間低溫發酵,充分排氣,就可以整到同樣綿密鬆軟嘅蒜蓉包,配個餐湯同主食,就係完美嘅一餐 。
食材
- 高筋麵粉 High-gluten flour 150克/g
- 奶粉 Milk powder 1湯匙/tbsp
- 糖 Sugar 15克/g
- 鹽 Salt 少許/Some
- 水 Water 70克/g
- 酵母 Yeast 1 茶匙/tsp
- 牛油 Butter 15克/g
- 雞蛋 Egg 25克/g
- 白芝麻 White sesame 適量/some
蒜蓉醬
- 蒜蓉 Garlic 適量/some
- 牛油 Butter 適量/some
- 鹽 Salt 適量/some

酵母加水拌勻 Mix yeast and water well.

將高筋麵粉、奶粉、糖、鹽先拌勻 Mix high-gluten flour, milk powder, sugar and salt well.

酵母水及雞蛋慢慢加入拌勻成團 Add eggs and yeast water in portions to form a dough.

搓5分鐘, Knead for 5 minutes.

加入牛油多搓15分鐘 Add butter and knead for 15 minutes.

取少許麵糰測試能否起薄膜 Check if the dough can form a film.

焗盤加油 Add oil to the baking dish.

氣炸鍋40°C發酵60分鐘 Ferment for 60 minutes at 40°C inside air fryer.

排氣用棍輾成長方形,然後捲成長條放入模內 Deflate dough at once, shape it into rectangle, roll to sausage shape.

氣炸鍋40°C發酵30分鐘 Ferment for 30 minutes at 40°C inside air fryer.

完成後,在麵糰掃上蛋液及撒上白芝麻 Then brush on beat eggs and white sesame.

放入已預熱180°c焗爐焗20分鐘即可取出脫膜放涼 Preheat air fryer to 180°C, air fry for 20 minutes, let cool down.

牛油細火加熱至溶化, 加入蒜茸及鹽,拌勻熄火 Melt butter at low heat, add garlic and salt, mix well.

切開麵包塗上蒜茸醬放入180°C焗爐焗6-7分鐘即可 Slice bread to add garlic fillings, bake for 6-7 minutes at 180°C. Enjoy.
