【挑戰味蕾】麻辣涼拌雞腎 Spicy chicken kidney (gizzard) salad

俗稱雞腎的雞肫,其實是雞的砂囊,有厚實的肌肉壁,用以磨碎食物,食落口感爽脆耐嚼,經常會用作小食或前菜。今次我們以麻辣醬涼拌,既麻且辣又爽脆,味道更加刺激,是挑戰味蕾的最佳食法!

- 雞腎 即買 (雞肫) Chicken kidney (gizzard) 250克/g
- 蔥段 Sectioned spring onion 2棵/stalks
- 薑片Ginger slice 3片/slices
- 蒜蓉 Minced garlic 2茶匙/tsp
- 薑蓉 Minced ginger 2茶匙/tsp
- 芫茜 Coriander 2棵/stalks
- 麻辣醬 Sichuan spicy sauce 2湯匙/tbsp
- 生抽 Oil ½湯匙/tbsp
- 蠔油 Oyster sauce ½ 湯匙/tbsp
- 麻油 Sesame oil 2茶匙/tsp
- 冰水 Ice 適量/Some
- 水 Water 適量/Some

煮沸一煲水,下蔥段和薑片,再下雞腎 即買 Boil a pot of water, add the shallots and ginger slices then add the chicken kidneys.

煮沸後,再轉小火煮15分鐘 Bring to a boil, turn to alow heat and simmer for 10-15 minutes.

撈起雞腎 即買 放入冰水浸10分鐘 Pick up the chicken kidneys and soak in ice water for 10 minutes

芫茜切碎 Chop coriander.

下雞腎 即買 ,芫茜粒和所有調味料 Mix tchicken kidneys, coriander and all seasoning.

拌勻 Stir well.
