- 雞錘drumsticks 2隻2 pcs
- 沙薑粉Dried ginger powder 1茶匙 1 tsp
- 鹽salt 1/4茶匙 ¼ ts
- 胡椒粉pepper 1/4茶匙 ¼ ts
- 蔥spring onion 少量 some
- 紅蔥頭shallots 半粒 ½ pc
- 麥芽糖maltose 1湯匙 1 tbsp
- 昭興酒Shaoxing wine 1茶匙1 tsp
- 白醋white vinegar 200毫升 200m
- 紅醋red vinegar 100毫升 100m

將沙薑粉,鹽,胡椒粉, 蔥,紅蔥頭醃雞錘 Marinate drumsticks with dried ginger powder, salt, pepper, spring onion and shallots.

用保鮮紙封好過夜 Wrap drumsticks with plastic wrap, let marinate overnight

煮勻白醋,紅醋,麥芽糖及紹興酒,待用 Stir and boil white vinegar, red vinegar, maltose and Shaoxing wine.

熱水輕煮雞錘 Boil the drumsticks for short while.

將雞錘浸醋 Soak drumsticks in vinegar mixture.

風乾至少都要兩個鐘 Take at least two hours to air dry

氣炸170度 15分鐘 air fry for 15 minutes at 170 C

反轉雞錘 Flip over.
