消暑湯水|節瓜瑤柱眉豆鹹豬骨湯Hairy gourd, dried scallop, black-eyed bean, and salted pork bone
節瓜、眉豆有清熱化炎的功效,乾瑤柱則能滋陰補腎。再配上醃了整晚的鹹豬骨,更添鹹鮮滋味。且豬骨的本身就能滋陰益髓,醃鹹後更增加了瀉下通便、軟堅散結、瀉火散熱的功效,十分適合一家大細享用!留意由於豬骨已醃鹽,調味時要輕手一點
節瓜:性涼味甘,能清熱解毒、利尿消腫、解熱止渴,緩解暑熱、水腫、膀胱炎
瑤柱:滋陰潤燥、補腎益精、補中益氣、養血安神,富含蛋白質、鈣、磷、鐵、鋅,改善貧血、失眠、腰膝酸軟
鹹豬骨:性平味鹹,滋補骨髓、益氣健脾、滋陰潤燥、補虛益血,富含膠原蛋白和氨基酸,促進骨骼健康和皮膚彈性
食材
- 節瓜 Hairy gourd 2條/pc
- 排骨頭 Pork bone 300克/g
- 乾瑤柱 Dried scallop 40克/g
- 眉豆 Black-eyed pea 40克/g
- 紅蓮子 Red lotus 40克/g
- 薑Ginger 1片/slice
- 果皮 Dried tangerine peel 1角/ ⅓pc
- 水 Water 2公升/Liter
- 鹽 Salt 1湯匙/tbsp

排骨頭洗淨抹乾 Rinse the pork bones and pat dry.

用1湯匙鹽醃過夜 Marinate in 1 tablespoon of salt overnight.

節瓜洗淨 Wash the hairy gourds.

用刀刮去表皮 Scrape off the skin with a knife.

切大件 Cut into large pieces.

乾瑤柱用水浸30分鐘 Soak the dried scallops in water for 30 minutes.

紅蓮子及眉豆洗淨後用水浸20分鐘 Soak the red lotus seeds and black-eyed beans in water for 20 minutes.

果皮浸軟去囊 Soften the dried tangerine peel by soaking and removing the pith.

將醃過夜排骨頭洗淨汆水備用 Rinse the marinated pork bones.

將節瓜、眉豆、紅蓮子、薑及果皮放入煲內 In a pot, add the hairy gourd pieces, lotus seeds, black-eyed beans, ginger, and dried tangerine peel.

加水一同煲滾 Bring to a boil.

放入排骨頭、乾瑤柱及浸瑤柱水, Add the pork bones, dried scallops, and the water used to soak the scallops to the pot.

大火滾10分鐘 Boil over high heat for 10 minutes.

轉中火滾45分鐘 Reduce to medium heat and simmer for 45 minutes.
