蛋香奶滑|氣炸奶皇春卷 Air fried milk custard spring rolls
奶皇餡料食起來既有奶香且非常滑溜,無論是奶皇包、奶皇月餅都大受歡迎。今次我們以自製的奶皇餡,以春卷皮包裹再氣炸,滿滿的奶皇餡料,最適合喜歡吃奶皇餡料的朋友。
食材
- 急凍春卷皮 Frozen spring roll wrapper 12張/Sheet
- 吉士粉 Custard powder 150克/g
- 鹹蛋黃 Salted egg yolk 4隻/pcs
- 鮮奶 Milk 250毫升/ml
- 牛油 Butter 適量As neede

鹹蛋黃放入氣炸鍋內,以150度氣炸8分鐘 Place the salted egg yolks in the air fryer and fry at 150°C for 8 minutes.

用叉將鹹蛋黃壓碎 Crush the salted egg yolks with a fork.

吉士粉與鮮奶拌勻備用 Mix the custard powder and fresh milk together and set aside.

小火煮溶牛油,下鹹蛋黃碎煮至起泡 Melt some butter over low heat, add the crushed salted egg yolks and cook until foamy.

下鮮奶,細火煮至半凝固 Add the custard mixture and cook over low heat until it thickens.

將春卷皮鋪平,把適量奶黃醬放在春卷皮中央 Lay out the spring roll wrappers and place some milk custard filling in the center of each wrapper.

捲起春卷皮,用少許蛋漿封口 Roll up the spring rolls and seal the edges with some egg wash.

春卷放在氣炸鍋的烤盤上,掃少許油,以200°C氣炸4分鐘 Place the spring rolls on the air fryer tray, brush with some oil, and air fry at 200°C for 4 minutes.

翻轉春卷,再掃少許油,以200°C氣炸4分鐘即成 Flip the spring rolls, brush with some more oil, and air fry for another 4 minutes at 200°C. Serve hot and enjoy!
