【利尿生津】節瓜冬菇瘦肉湯 Hairy gourd, shiitake mushroom and lean pork soup

在酷熱的環境,人體會透過增加排汗和呼吸以降溫;但當溫度過高,生理調節亦能控制體溫時,便會出現熱衰竭甚至中暑,病徵包括頭暈、頭痛、噁心、氣促及神志不清等,嚴重甚至有生命危險。預防中暑除了要避開烈日或過熱的環境,多在陰涼的地方活動,亦要多補充水份。
節瓜性平味甘,能止渴生津,清熱利尿,驅暑,健脾利腸,且不及冬瓜涼,大部份人都合用。冬菇性平味甘,補氣益腎功效。木耳性平味甘,有涼血止血、潤肺益胃、益氣補血功效。生薑有助加強健脾和祛濕。這道節瓜冬菇瘦肉湯,十分適合戶外活動前後飲用,以收預防中暑的功效。

- 節瓜 Hairy gourd 1個/pc
- 冬菇 Shiitake mushroom 10隻/pcs
- 乾木耳 Dry wood ear mushroom 15克/g
- 紅棗 Red dates 4粒/pcs
- 瘦肉 Lean prok 300克/g
- 薑 Ginger 2片/slices
- 酒 Wine 少許/Some
- 水 Water 2.5公升/Lite

瘦肉汆水備用 Blanch lean pork and set aside.

節瓜去皮切件 Peel and cut the hairy gourd into pieces.

冬菇浸軟去蒂 Soak dried shiitake mushrooms until they are soft, and remove the stems.

乾木耳浸軟切大塊 Soak the dried wood ear mushrooms until they are soft, and cut them into large pieces.

煲滾2.5公升水,下所有材料,滾起後轉小心煲2小時 Bring 2.5 liters of water to a boil, add all the ingredients. Simmer gently for 2 hours after boiling.

酌量下鹽調味,完成 Season with salt to taste, and it's done.
