【保持膠質】浸發花膠 Rehydrate dry fish maw
花膠除了是做節菜式常用的食材外,亦愈來愈多人在平時用以煲湯水、打邊爐。很多人會以熱水浸花發膠,但這樣會令膠質流失,變薄及失去口感。今次教大家酒樓常用的方法,能保持花膠的膠質及厚度,食落自然更加滋味。
食材
- 乾花膠 Dry fish maw 適量 / Some

先用凍水洗淨花膠,有需要可用牙刷刷淨 Rinse dry fish maw with cold water. You may use a toothbrush if needed.

將薑片及葱段放在水中煲滾,然後將花膠放在碟上,隔水蒸約30分鐘至變軟可摺曲。時間需視乎花膠大小及厚薄而調整。 Bring a pot of water with spring onion stalks and ginger slices to a boil. Put dry fish maw on a plate and steam for about 30 minutes. Adjust the time according to the size of the fish maw.

花膠放涼後,放入洗乾淨完全無油的器皿內,加凍滾水至浸過表面,包好放雪櫃浸過夜 After cooled down, put the fish maw inside a container which is completely cleaned and without oil. Add cold water until over the fish maw. Wrap and put inside the fridge overnight.

花膠每日換水,浸2-3日至變得軟身、顏色變淺即可,如表面有血絲可用小鉗除去,最後用凍滾水冲洗乾淨,瀝乾水份即可 Change water everyday. Soak the fish maw for 2-3 days until it softened and whitened. Remove the remaining blood vessels with a pair of tweezers. Rinse and drain dry.

發好的花膠可以用保鮮袋包好,放冰格放3個月,使用前一晚取出放雪櫃解凍即可 You may keep the rehydrated fish maws in a freezer for several months.
