- 鹽 Salt ¼茶匙 ¼tsp

- 紅葱頭 Shallot ½粒 ½pc
- 麥芽糖 Maltose 1湯匙 1tbsp
- 昭興酒 Shaoxing wine 1茶匙 1tsp
- 白醋 White vinegar 200毫升 200m
- 紅醋 Red vinegar 100毫升 100m

將沙薑粉、鹽、胡椒粉、葱、紅葱頭醃雞錘 Marinate drumsticks with sand ginger powder, salt, pepper, spring onion and shallot.

用保鮮紙封好過夜 Wrap drumsticks with plastic wrap, let marinate overnight.

拌勻白醋、紅醋、麥芽糖及紹興酒,煮滾備用 Stir and boil white vinegar, red vinegar, maltose and Shaoxing wine.

熱水輕煮雞錘 Boil the drumsticks for short while.

將雞錘浸醋 Soak drumsticks in vinegar mixture.

風乾最少兩小時 Take at least two hours to air dry.

以170度氣炸15分鐘 Air fry for 15 minutes at 170°C.
