【簡易甜品】抹茶巴斯克芝士蛋糕 Matcha Basque Burnt Cheese Cake
這個抹茶巴斯克芝士蛋糕口感濃郁而豐富,味道亦相當微妙,既然芝士濃郁嘅羶香,亦蘊含抹茶絲絲苦澀,食落唔會覺得滯。巴斯克芝士蛋糕基本上好難失敗,因為佢本身就係因失敗而出現產品,所以新手不妨試整吖!
食材
- 忌廉芝士 Cream cheese 250克/g
- 砂糖 Sugar 70克/g
- 雞蛋 Eggs 160克/g(約 3
- 牛奶 Milk 200克/g
- 抹茶粉 Matcha powder 15克/g
- 低筋麵粉 Cake flour 20克/g
- 消化餅乾 Digestive Biscuits 110克/g
- 牛油 Butter 70克/g

把牛奶和抹茶粉加熱混合,放涼備用。 Heat and mix milk and matcha power, let cool.

把牛油溶化,加入消化餅碎拌勻 Melt butter and mix with crushed digestive biscuits.

放入蛋糕模用湯匙壓平,放入雪櫃冷藏30分鐘備用 Press and flatten inside a cake mould. Then freeze for 30 minutes.

先把忌廉芝士和砂糖拌勻 Mix cream cheese with sugar.

再加入雞蛋、煮好的抹茶鮮奶 Then add in egg and matcha milk.

最後加入低筋麵粉,徹底拌勻 And finally cake flour. Mix well thoroughly.

把拌好的蛋糕混合物倒在餅底上,敲幾下去除多餘空氣 Pour in mixture on top of crust, tap to remove excess air.

放入氣炸鍋180度焗20分鐘 Air fry at 180°C for 20 minutes.

打開氣炸鍋,用錫紙蓋住蛋糕面,再180度氣炸5分鐘 Open the airfryer ,cover the cake with aluminium foil, air fry at 180°C for 5 minutes more.

放雪櫃雪一晚即可 Freeze overnight and enjoy.
