【簡易甜品】蛋花水晶糕 Egg drop jelly

- 水Water 300克/g
- 魚膠粉 Gelatine 15克/g
- 白糖Sugar 20/g
- 雞蛋 Egg 1隻/pc
- 牛奶Milk 250g
- 魚膠粉Gelatine 15g
- 白糖Sugar 20g

砂糖加入水拌勻後倒入魚膠粉煮滾 Mix well sugar, water and gelatine. Bring to a boil.

小火倒入已打散的雞蛋 Turn to low heat. Add whisked egg liquid.

倒入模具8成滿 Pour into a mould until 80% full.

冷藏2小時 Freeze for 2 hours.

鍋中加入砂糖和牛奶細火煮溶後再倒入魚膠粉煮至滾起後離火 Mix sugar and milk. Heat over low heat. Add gelatine after all sugar are dissolved then turn off heat.

降溫後倒在已凝固的蛋花上 Pour on top of the egg drop jelly after cooled down.

冷藏1小時 Freeze for 1 hour.

脫模即成 Demould and done.
